What is the role of handwriting in Education?

That is a broad question and meant to be so.

As a school advisor who specialises in ICT, I also have a responsibility to promote a mixed economy of inputing information including keyboards, swiping (as in a tablet/smart phone) and of course handwriting. In my experience using only one input method leads to problems. Suzanne Smits from morrellshandwriting.co.uk is worth speaking to on this subject.

From my own experience, there is a whole wealth of intellectual activities where handwriting is way faster and more handful than digital writing.

For example, when you have to sketch visually the solution of a problem, or you want to compare two, or more, different patterns of solutions etc. paper-and-pencil is still the way to go.

My students frequently try freehand writing on tablets, but they find quite annoying you can visualize one sketch at a time only.
